Our Shellfish farm is located on the North end of Lopez Island and features a 3-acre tidal lagoon with a freshwater spring and 3 acres of tidelands on Shoal Bay. Our Shellfish benefit from a unique combination -located as we are on a warm protected bay – the shellfish are extremely well fed and sheltered, yet twice a day clean, cold water from the Straits and Pacific Ocean flush across the beach and into the lagoon. This gives us both fat, sweet, robust shellfish and the fine, clean flavor usually associated with oysters grown in deep water suspension. All of our oysters begin their lives in the lagoon. European Flat and Olympia Oysters are grown to maturity in the lagoon, while our Pacific oysters are transferred to the beach for the last 6 months of their lives to grow thicker shells and harden them for durability out of the water after harvest. Clams are grown in both the lagoon and on the beach, while mussels spend their entire lives in the lagoon in a variety of floating gear.
Our shellfish are currently sold throughout the county and to some of the most discriminating markets in Seattle. Currently, our Pacific and Olympia oysters are being featured by Elliot’s Oyster House on the Seattle waterfront.
The shellfish farm is the site of an Indian village, and shellfish middens ring the bay. They attest to the duration and sustainability of shellfish harvest. We are proud to be part of this tradition, and we are extremely proud of the superlative quality of our wares.
Also originating with the Finkbonners, these prawns are simply the culinary standard for shrimp. They are what all other shrimp would like to be, when they grow up. They are superlative in any preparation, and freeze very well. Supplies are extremely limited, and most of the harvest goes directly to Asia. We are lucky enough to be able to divert prawns to local markets. We sell fresh batches immediately following openings, and frozen while supplies last. The fishery usually run from late April through late May.
Additionally, we offer South East Alaska spot prawn tails packed and frozen on the boat available year round.
Alaskan Weathervane Scallops
We are offering Alaskan Weathervane Scallops for the first time in 2011 to fill our customers’ needs for a top quality, year round source of Scallops. These scallops are harvested in small volumes in coastal central Alaska and immediately frozen. We are delighted to work with such a superior product, and with such dedicated producers as the Scallop Co-Op.
